The Tsumoto Method (Tsumoto-shiki) is a specialized, high-performance fish blood-removal technique developed by Mr. Mitsuhiro Tsumoto in Japan. It is designed to remove 99% of a fish's blood (spinal cord removal too) using water pressure, which significantly extends the fish's shelf life, prevents odor and bitterness, and improves the flavor, texture, and quality of the meat, making it ideal for aging.

Key Aspects of the Tsumoto Method:

  • Technique: The method involves using water pressure to flush blood out of the fish’s vessels, often referred to as "ultimate blood removal". Complete spinal cord & central nervous system can be flushed out too.
  • Purpose: By removing the blood, which accelerates spoilage, fish treated with this method can be kept for over a week and develop a unique, deep flavor and texture, suitable for high-quality sashimi. Spinal cord removal stops muscle contraction, preventing stress-induced lactic acid/ammonia buildup, which results in superior taste, better texture, longer shelf life, and enhanced flavor (umami).
  • Tools: Specialized tools are used, Tsumoto-type Blood Removal Pump, a portable device designed to facilitate this process at fishing spots, on boats, or at home.
  • Application: It is widely used for preparing fish for, or during, the export process, allowing even delicate fish to remain fresh. 

The Tsumoto method is often contrasted with traditional, less effective blood-letting methods, which only drain blood from large blood vessels.

How to prepare fish using the Tsumoto Method

①Insert the blade into the upper part of the fish’s gills and make a cut in the blood vessel under the spinal column.

②Make a slit in the tail and cut off the bone using the back-edge of the blade.

③ Fold the tail of ② and check the nerve hole and blood vessel.

④ Insert the special nozzle into both the nerve hole and blood vessel in ③ and inject water.

⑤ Use a hose to pour water into the break in the blood vessel in ① for about 3 seconds to bleed it out.

⑥Remove gills and internal organs, which are perishable.

⑧Wrap in absorbent paper and water-resistant paper, vacuum, and pack.
